I would never have thought to post about some mundane fish patties were it not for this month's challenge. The Daring Cooks’ February 2012 challenge was hosted by Audax & Lis and they chose to present Patties for their ease of construction, ingredients and deliciousness! We were given several recipes, and learned the different types of binders and cooking methods to produce our own tasty patties!
Those aren't green sunflower seeds, it's the parsley ground in with them.
Fantastic Fish Patties
1 can salmon, mackerel, tuna, etc. or the equivalent cooked fish
1/2 onion, minced
1 tablespoon vinegar
3/4 cup ground sunflower seeds
seasoning of choice, dill, parsley, oregano, fennel pollen
salt and pepper to taste
1-2 tablespoons olive oil
Grind the sunflower seeds (I threw the parsley in there as well - about 1/4 cup) in a food processor. Flake your fish in a medium bowl, add in the remaining ingredients and mix well. Form into patties and fry in the oil for about 3 minutes on each side, or until they start to brown.
I didn't put these in slider buns, just served with some homemade dressing, freshly baked bread on the side and a slaw of carrots and cabbage. Delicious and quick, perfect for a week night meal. Check out The Daring Kitchen and just see how many kinds of patties people came up with.
Thanks for sharing this recipe. I was intrigued at the forum, cause I never thought to use sunflower seeds as a binder. I'll have to try that sometime soon!

ReplyDeleteSunflower seeds sounds like an interesting binder - maybe a little healthier. I wish I could get my wife to like fish cakes - they may be mundane but they're good.

ReplyDeleteJust tonight I was looking at a recipe for salmon cakes: it uses mayo, which I don't really like. And crab cakes do too. I like your idea of using sunflower seeds much better.
