Happy Cinco de Mayo, which we all know is just an excuse :) and after all our earthquakes and volcanic eruptions yesterday, I figure we're due for one. I do love kumquats, just to eat out of hand, and they're also good for chutney, and lots of other things, like this:
Kumquat
Margaritas
for 3 SERVINGS
Ingredients:
- 12
ounces kumquats, halved and seeded
- 1/2
cup water
- tequilla
- triple
sec
- sugar
syrup*
- ice
Directions:
- Combine
kumquats and water in a blender and blend on high until smooth(ish). Pour
mixture through a fine mesh sieve to remove pulp and any remaining seeds and big chunks.
- For
each drink, in a cocktail shaker, combine 3 ounces (5-6 tablespoons)
kumquat puree with 1 ounce (2 tablespoons) tequila, 1/2 ounce (1
tablespoon) triple sec, and sugar syrup to taste (I used 2 tablespoons). Shake well to combine. Pour over ice. I added some of the strained pulp back in, just for more flavor, and rimmed the glass with a local favorite, Li Hing Mui powder (which is salt and dried prume). Moisten the rim with some kumquat juice and swirl in the powder or salt or sugar if you'd prefer, and add a kumquat slice for garnish.

Your location in Keaau looks too close to the volcano for comfort! Though I understand you don't have any lava in your back yard. Did you feel the earthquakes?
ReplyDeleteKumquats are not especially common here in Michigan -- I assume you are growing your own? I would like to try that drink but will probably have to stick with something more ordinary.

Yes, we're close, Mae, but in no danger from lava. It's maybe 10 miles SE of us, and heading toward the ocean. But the earthquakes were another story. One was quite scary - 6.9 and the one before that 5.4, for which I was in the grocery store and stuff was dropping off the shelves. Must have been 6 or more yesterday, some only tremors.
ReplyDeleteOn a happier note, I do have a kumquat tree in the garden, but too young to produce fruit as yet, so from the market for these.
What a flavorful looking drink. Of course I have no idea where I would get a kumquat- not true- I have seen them in the store at certain times of the year. I bought a container once but used them for decoration.

ReplyDeleteKumquats are readily available in regular grocery stores, but usually in the fall. Even decades ago, my mother and grandmothers would buy them as soon as they started appearing in the grocery. That was in Ohio. These days, I can buy most of the year at my local supermarket, here in Pennsylvania. I love them.
ReplyDeleteWe have kumquat trees here too but none in our yard. I do have a loquat tree! Yes, I agree, any excuse for a margarita!

ReplyDeleteI keep thinking about you and hoping that everything is still downwind from you and all is OK. I think you deserve multiple margaritas--it looks delicious. I don't do enough with kumquats.
ReplyDeleteYes, thanks Deb, we're still not getting the noxious gasses and the earthquakes have stopped, Praise God. Sadly, friends have been evacuated and some lost their homes.
