Fiddlehead Ferns for Dinner


I am so thrilled with my warabi, or fiddle-head ferns.  The little patch of them in a side garden by some rocks has grown and is thriving.  We are now having lovely fern shoots as a vegetable from time to time, and I don't need to go out in the boonies and forage.

Whether you know them as warabi (Japanese), ho‘i‘o (Hawaiian) or ostrich fern (most of the mainland), the fiddle-head ferns are the young, edible, tightly coiled shoots of the fern that resemble the end of a violin or fiddle. The shoots remain coiled for about two-weeks before they unfurl into the delicate, lacy greenery we are all familiar with.

The species most commonly found in Hawai‘i is the Pteridium aquilinum, which grows in temperate and sub-tropical regions. It was introduced to the islands by Japanese immigrants who value it mainly for the young stems rather than the unfurled coils. Certain varieties of the plant contain the carcinogenic compound Ptaquiloside and need to be cooked thoroughly before eating.

Eat Local - Snails

This is my encouragement for you all to eat these pests.  I can't, because they're a bit of trouble to prepare and I would be the only one in our family eating them.  Therefore, since my plan is to sell them, it is important that YOU EAT THEM!  Now the only problem is finding escargot lovers who would like a fairly regular supply.  BTW, the ones in my photos are young, they get much bigger. I found some interesting information about our local (invading) variety on this site, as cited below:

Snail meat is high in protein (37-51%) compared to that of guinea pig (20.3%), Poultry (18.3%), Fish (18%), Cattle (17.5%), Sheep (16.4%) and Swine (14.5%). Iron content (45-59mg/kg), low in fat (0.05-0.08%) and contains almost all the amino acids needed for human nutrition. In addition to the nutritional value of snail meat, recent studies indicated that the glandular substances from edible snails cause agglutination of certain bacteria, which could be of value against a variety of ailments including whooping cough. In folk medicine, the bluish liquid obtained when the meat has been removed from the shell is believed to be good for infant's development. It is believed in some quarters that snail meat contains pharmacological properties of value in counteracting high blood pressure.
At the imperial Court in Rome, snail meat was thought to contain aphrodisiac properties and was often served to visiting dignitaries in the late evening. The high Iron content of snail meat is considered important in the treatment of anemia and in the past the meat was recommended as a means of combating ulcers and asthma.
There is a flourishing international trade of snails in Europe and North America. In France the annual requirement is about 5 million kg, over 60% of which is imported. The estimated annual consumption in Italy is 306 million snails. In West Africa, snail meat has traditionally been a major ingredient in the diet of people living in the high forest belt. In the Cote d'Ivoire, for example, an estimated 7.9 million kg is eaten annually. In Nigeria, although the consumption figures are not available, it is clear that demand outstrips supply.

I Didn't Die

I thought I was being the original foraging, frugal gourmet, when someone I trusted identified my find as Almond Portobellos, or Agaricus subrufescens. He thought he detected the signature almond scent. I didn't but thought it must just be very faint. Oh goodie! Reassured with a quick glance at a reference book, I immediately sauteed them up with herbs, a few leftover veggies, and butter, topped some pasta with it, and voila, lunch. They were quite good, though no almond taste either, I thought, while reading further in my Mushrooms of Hawaii book. Funny, they also didn't meet a few other criteria. No annulus near the apex, no yellow bruising on lower half of the stalk when touched. Oh Boy. Dum de dum dum...

No, I didn't die. Or get sick, force myself to throw them up, or even have indigestion later.



Further reading in the mushroom identification guide leads me to believe what I ate was Agrocybe procera. They seem to have all the qualifications. I'm presently doing a spore print, which should help. Thing is, the book says, Edibility: unknown. Maybe I'm contributing to mycology here. Using myself as a guinea pig. I don't recommend this technique.



If anyone else wants to contribute their professional or amateur gourmet opinion, feel free. Another quote from the book which sort of worries me: "Although we are unable to identify this species with certainty, it is very similar to Agrocybe procera, described from Chile."



They were growing in wood chips compost, by the way.



Also, the gills turn brown with more maturity. I wonder, should I eat the ones I picked this morning?

Monday afternoon update: I visited the charming Dr. Don Hemmes, Mycologist and co-author of the above referenced mushroom identification guide, at the University this morning, with my spore print and some sample mushrooms. He confirmed their tentative species as the Agrocybe procera, and had a good story of the only (aside from me) other eating experience he'd heard of. He was called to the emergency room at Hilo Hospital to examine some mushrooms the parents of a 5 yr. old child brought in with the the little girl, who had apparently ingested a large quantity of them. When they were asked about why she did this, her two older brothers were observed to be sheepishly studying the floor. They had given her some story as to why she should eat those magic mushrooms. Well, she didn't turn into a fairy, or get sick either. I didn't even have the excuse of thinking they were magical. Just edible.
